Farm meals, a foundation and glamping tents

Emmanuella Assinu is developing three interconnected social enterprises, starting with Lydia's Table, a farm-to-table wellness initiative fed by poultry and vegetable farms.

Poultry and vegetable farms supply the meals at Lydia's Table. It is a farm-to-table wellness initiative, and Emmanuella Assinu describes it as "providing fresh, nutritious meals sourced from our poultry and vegetable farms while encouraging healthy and sustainable eating habits."

It is one of three enterprises she is developing. The Noble's Foundation is "dedicated to supporting vulnerable individuals and underserved communities." The third is a Glamping Tents Initiative, an eco-tourism and hospitality project she says is "designed to create jobs, promote local tourism, and provide unique recreational experiences."

“Basic needs must be a necessity.”

All three are in development. Together, she says, they seek to improve livelihoods and foster sustainable development.

She sets the enterprises against what she sees across many communities in Ghana: unemployment, food insecurity, poor nutrition, limited access to economic opportunities and inadequate support systems for vulnerable populations. These challenges, she says, are particularly evident among young people, women, low-income households and vulnerable groups.

Among the most pressing, she says, is food. She calls it "the growing disconnect between food production and healthy consumption."

"Despite the abundance of agricultural potential, many families rely heavily on processed foods and unhealthy eating habits due to convenience, limited awareness, or lack of access to fresh and nutritious alternatives," she says.
